Lavender Simple Syrup Recipe

It’s my favorite time of year: the season where everything is lavender flavored. The many bushes around my property have tiny alien stalks popped popping up from the greenery, with little purple heads beginning to burst. Summertime is here, and so is lavender.

If you don’t live in Utah, and can’t pick up a bottle of Vecinos homegrown, homemade lavender simple syrup, don’t worry–the recipe is wildly simple. All you need is: dried lavender, sugar, and water. Seriously, that’s all it takes to turn your morning coffee into a barista-approved bevy.

Here’s how I make my lavender simple syrup:

  1. In a small pot, combine a 1:1 ratio of sugar and water, one cup each.

  2. Add in a small handful of lavender to the liquid. I only add about 6-10 sprigs, a little goes a long way, and too much lavender can be overpowering or bitter.

  3. Bring the water to a low bubbling boil, stirring until all the sugar dissolves.

  4. Remove from heat and let the lavender steep for 20 minutes.

  5. Strain your syrup to ensure all the little plant bits are removed.

  6. Store the lavender syrup in a bottle or jar, and keep in the fridge!

But you can always just stop by the homestead for a bottle instead.
